20 Minute Garlic Butter Shrimp Scampi
-1/2 cup unsalted butter, cubed
-4 cloves garlic, minced
-1medium shallot, minced
-1/4 teaspoon crushed red pepper flakes
-1 1/2 pounds medium shrimp, peeled and deveined
-kosher salt and fresh ground pepper, to taste
-3 tablespoons chopped fresh parsley leaves
-1 tablespoon fresh squeezed lemon juice
-2 teaspoons lemon zest
1. Melt butter in a large skillet over medium heat. Once melted, add garlic, shallot, red pepper flakes and cook, stirring frequently about 2 minutes.
2. Add shrimp; season with salt and pepper. Stir occasionally, until pink and cooked through, this will take about 3-4 minutes.
3. Stir in parsley, lemon juice, and zest.
4. Serve immediately!
*This dish is delicious over a bed of greens, or pasta of your choice!
